Alfredo mushroom Shrimp

Ingedients

Alfredo Mushroom Shrimp

  • 1 pound of shrimp, cleaned and deveined
  • 4 gloves of minced garlic
  • 1/2 cup heavy cream
  • 3 tbsp of unsalted butter
  • 1/2 cup of shredded parmesan cheese
  • salt and pepper to taste
  • 1/2 cup sliced mushrooms
 
Garlic Mashed ‘Potatoes’
 
  • 1 head of cauliflower
  • 1/2 tsp minced garlic
  • 1/2 tsp salt
  • 1/2 tsp of parmesan cheese
  • 1/2 tbsp of cream cheese or organic heavy cream
  • pinch of ground black pepper
  • a tad of fresh chives, for garnish
  • unsalted butter
Directions
 
Alfredo Mushroom Shrimp
  1. Fry garlic and mushrooms with butter in a saucepan until the garlic is golden brown, add cream and cheese and reduce heat.
  2. Let the parmesan cheese melt and add shrimp.
  3. Cook for 3 minutes. And turn off the heat and let simmer until the shrimp has cooked all the way through. 

Garlic Mashed ‘Potatoes’

  1. Cut off the stems of the cauliflower and break it into individual heads.
  2. Steam for 15 minutes or until a butter knife can easily cut through it.
  3. Drain and do not let cool. Pat them very dry with paper towel.
  4. Mix together in a food processor with garlic, salt, cheese, cream, and pepper until smooth.
  5. Garnish with chives and serve got with butter.

 

Notes

Great cold the next, if any left over the next day, as its so deliciious.
